I have been experimenting with all sort of smoothies, and smoothie additions. Yesterday I ended up with a smoothie that I found very reminiscent of those warm, smashed PBJs I ate the summer I rode my bike to work at the town park, where I worked as a swimming instructor and lifeguard.

This smoothie includes several super-foods – although, really, if you are only having a teaspoon or a tablespoon, the nutrition labels don’t convince me they are all that super. The foundation is berries, mostly strawberries, and kale. Not something you would expect to result in a hint of PBJ, but there it is.

I didn’t measure as I made it, so these amounts are estimates, if you’re feeling adventurous try it for yourself, and change the ingredients as you desire.

1 cup frozen berries – at least half of them strawberries
2 cups chopped kale
1 teaspoon masa powder
1 teaspoon bee pollen

1 teaspoon Bragg’s nutritional yeast
2 tablespoons Tru-Nut powdered Peanut Butter
Water and ice, sufficient to make it as thick/thin as you prefer

Place all ingredients in the blender, blend for 45 seconds or so.

Now comes the disclaimer: I have been a smoothie drinker for years, maybe decades. And, as my family will attest, I drink ‘swamp water’ and say, “not bad.” With that said, I asked my husband to confirm the PBJ essence of this smoothie, and he confirmed it. So, this is not a ‘swamp water’ smoothie – although it is very high in all sort of good things! 🙂

Lemony Spinach Smoothie

Yield: 2

Lemony Spinach Smoothie

  • 1 box organic baby spinach
1 T organic coconut oil

  • 1 cup organic frozen mango chunks

  • 1 T grated fresh ginger

  • zest from 1/2 small organic lemon
juice from 1/2 lemon

  • 4 ice cubes
1 cup water

  1. Blended it all together, what a flavorful lemony beverage.
  2. I've read that lemons may be cancer fighting, check out some truth on this site. I already drink lemon juice and cayenne pepper in warm water every morning. But, got the impression I might be throwing away the best part. Hence the zest along with the juice in this smoothie. The flavor boost is incredible, and, it seems may also be incredibly beneficial.
  3. Give it a try, you just might love it too!
