INGREDIENTS

Butter for the pan

1/2 pound sausage

6 ounces grated cheddar

6 eggs

1 cup milk

1/4 tsp thyme

1/2 tsp parsley

1/8 tsp paprika

Salt and pepper

DIRECTIONS

Heat oven to 350ºF, butter the baking pan.

Precook the sausage and drain most of the oil.

Put the sausage in the bottom of the baking pan, sprinkle evenly with the cheese, tap down slightly.

Mix the eggs, add the milk, and pour over the sausage and cheese. Then sprinkle with thyme, parsley, paprika, and a dish of salt and pepper.

Bake about 30 minutes until browned on top and a knife inserted in the middle comes out clean.

NOTES

Use venison or pork sausage.
Venison makes a particularly wonderful dish.

6 slices of cinnamon raisin bread

6 eggs

1/4 cup maple syrup

1/2 tsp cinnamon

1 cup half-and-half or milk

DIRECTIONS

Preheat oven to 350ºF, and butter a 8×8 or oversize loaf pan.

Butter bread on 1 side, stack slices with butter sides facing, and chop into small pieces.

Put bread into the pan.

Mix eggs with syrup and cinnamon, add 1 cup milk or half-and-half, mix well. Pour over the bread.

Bake about 30 minutes, until eggs are set and the casserole is browned.

Serve immediately, or eat cold, as a dessert.

 

Saturday Morning Eggs

This is a version of our scrambled eggs, typically part of our Saturday mornings.

Ingredients

  • 1 T butter

  • 1 T olive oil

  • 1/4 c chopped onion
  • 
1/4 c chopped mushrooms

  • 4 eggs

  • 1/4 t chipotle pepper

  • 1 c chopped tomato

  • 2 T chopped cilantro

  • 1/4 c shredded cheddar cheese
 - or your preferred cheese
  • 2 small handfuls of baby spinach

Instructions

  1. Put oil and butter in the pan, turn it to medium heat, add onions, stir around occasionally.
  2. When the onions are soft add the mushrooms. Allow them to sit a min or two to get golden edges before stirring.
  3. Sprinkle chipotle pepper on the mix.
  4. When the mushrooms have reached a nice golden state add the 4 eggs, stir to 'scramble' them. Allow to cook a moment, then stir again.
  5. When the eggs are mostly done turn off the stove. Give them a final stir, then sprinkle the tomato, cilantro, and cheese on top and pop them into the broiler for just a minute or two, until the cheese is melted.

Notes

Serve on a bed of fresh baby spinach.
